A delicious and easy recipe for Almond Flour Banana Bread that is perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups almond flour
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, eggs, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the almond flour, baking soda, salt, and ground cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped walnuts or pecans.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For added flavor, mix in 1/2 cup of dark chocolate chips or dried fruit.
  • If you prefer a sweeter bread, increase the honey or maple syrup to 1/3 cup.
