A delicious and easy recipe for Almond Flour Banana Bread that is perfect for breakfast or a snack.

- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups almond flour
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, eggs, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Mix until well combined.
- In another bowl, whisk together the almond flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, mix in 1/2 cup of dark chocolate chips or dried fruit.
- If you prefer a sweeter bread, increase the honey or maple syrup to 1/3 cup.
