Ingredients

- 1 cup cherry tomatoes, halved
- 1/2 cup shaved Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
Instructions
- In a large salad bowl, combine the arugula and cherry tomatoes.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the arugula and tomatoes, tossing gently to coat.
- Add the shaved Parmesan cheese and toasted pine nuts, if using, and toss lightly again.
- Serve immediately for the freshest taste, or chill in the refrigerator for up to 30 minutes before serving to enhance the flavors.
