- 4 cups mashed potatoes (prepared from about 2 pounds of potatoes)
- 1 cup shredded sharp cheddar cheese
- 1 cup cooked and crumbled bacon (about 8 slices)
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika (optional for topping)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the mashed potatoes, half of the cheddar cheese, crumbled bacon, sour cream, milk, green onions, garlic powder, salt, and black pepper. Mix until well combined and creamy.
- Transfer the potato mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Sprinkle the remaining cheddar cheese on top of the potato mixture. If desired, add a sprinkle of paprika for color.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for about 5 minutes before serving.
Notes
- For a creamier texture, use heavy cream instead of milk.
- You can also add cooked broccoli or cauliflower to the potato mixture for added veggies.
- If you want a crunchy topping, sprinkle some panko breadcrumbs mixed with melted butter before baking.
