A quick and easy dessert salad made with mixed berries and a creamy cheesecake filling.
Ingredients

- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 (8-ounce) package cream cheese, softened
- 1 (8-ounce) container whipped topping (like Cool Whip)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup crushed graham crackers
Instructions
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar and vanilla extract to the cream cheese, and mix until well combined.
- Gently fold in the whipped topping until the mixture is light and fluffy.
- Add the mixed berries, mini marshmallows, and half of the crushed graham crackers to the bowl. Carefully fold everything together until evenly mixed.
- Transfer the mixture to a serving dish and sprinkle the remaining crushed graham crackers on top for garnish.
- Chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Notes
- For a lighter version, use low-fat cream cheese and sugar-free whipped topping.
- Swap out the mixed berries for your favorite fruits, such as peaches or bananas, for a different flavor profile.
