Description

A delicious and creamy crockpot dish featuring tender chicken, garlic, and Parmesan cheese served with pasta.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 8 ounces cream cheese
  • 1 cup grated Parmesan cheese
  • 12 ounces penne pasta
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Place the seasoned chicken in the crockpot.
  2. Pour the chicken broth over the chicken. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  3. Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  4. Add the cream cheese and grated Parmesan cheese to the crockpot. Stir until the cheeses are melted and well combined.
  5. Cook the penne pasta according to package instructions until al dente. Drain and add the cooked pasta and frozen peas to the crockpot. Stir everything together until well mixed.
  6. Cover and cook on low for an additional 15-20 minutes to heat through.
  7. Serve hot, garnished with chopped fresh parsley.

Notes

  • For a lighter version, substitute half of the cream cheese with Greek yogurt.
