- 1 cup semi-sweet chocolate chips
- 1 cup brownie mix
- For the filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/4 cup brown sugar, packed
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips and brownie mix until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
- While the cookies are cooling, prepare the filling by beating together the softened butter, powdered sugar, brown sugar, milk, and vanilla extract until smooth and creamy.
- Fold in the mini chocolate chips.
- Once the cookies are completely cooled, spread a generous amount of the filling on the flat side of one cookie and top with another cookie, flat side down, to create a sandwich.
- Repeat with the remaining cookies and filling.
- Serve immediately or store in an airtight container in the refrigerator for up to 5 days.

- For a richer flavor, try adding a tablespoon of espresso powder to the cookie dough.
- For a fun twist, substitute the mini chocolate chips in the filling with crushed Oreos or peanut butter chips.
