Description
A refreshing and healthy Carrot Apple Salad that combines the sweetness of apples with the crunch of carrots and walnuts, dressed in a creamy yogurt dressing.
Ingredients

- 2 large carrots, grated
- 2 medium apples, cored and diced (preferably Granny Smith or Fuji)
- 1/2 cup raisins
- 1/4 cup walnuts, chopped
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the grated carrots, diced apples, raisins, and chopped walnuts.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the yogurt dressing over the carrot and apple mixture.
- Toss everything together until well combined.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve cold and enjoy!
Notes
- For added crunch, substitute the walnuts with sunflower seeds or pumpkin seeds.
- To make it a more filling dish, add cooked quinoa or shredded chicken for extra protein.
