A creamy and delicious Chicken Caesar Pasta Salad perfect for a quick meal or a side dish.

- 8 ounces rotini pasta
- 1 tablespoon olive oil
- 2 cups cooked chicken, shredded or diced
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- ½ cup Caesar dressing
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: croutons for topping
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, olive oil, cooked chicken, cherry tomatoes, and romaine lettuce.
- Pour the Caesar dressing over the mixture and toss until everything is well coated.
- Add the grated Parmesan cheese, and season with salt and pepper to taste. Toss again to combine.
- If desired, top with croutons for added crunch. Serve immediately or chill in the refrigerator for 30 minutes before serving for a colder dish.
Notes
- For added flavor, consider marinating the chicken in Caesar dressing for a few hours before cooking.
- You can also substitute grilled shrimp or tofu for the chicken for a different protein option.
