- 2 cups cooked chicken, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup grapes, halved (optional)
- 1/4 cup slivered almonds (optional)
- Salt and pepper to taste
- Lettuce leaves for serving (optional)
Instructions
- In a large bowl, combine the cooked chicken, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.
- Add the chopped celery, red onion, grapes, and slivered almonds (if using). Stir gently to incorporate all ingredients.
- Season with salt and pepper to taste. Adjust the seasoning as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the chicken salad on a bed of lettuce leaves or as a sandwich filling.
Notes
- For a healthier option, substitute half of the mayonnaise with additional Greek yogurt.
