A refreshing twist on traditional chicken salad, featuring apples for a sweet crunch.
Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 medium apple, cored and diced (about 1 cup)
- 1/2 cup celery, diced
- 1/2 cup red grapes, halved
- 1/4 cup walnuts, chopped (optional)
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- In a large mixing bowl, combine the shredded chicken, diced apple, celery, grapes, and walnuts (if using).
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and garlic powder until smooth.
- Pour the dressing over the chicken mixture and stir gently until everything is well coated.
- Taste and adjust seasoning if necessary.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled on a bed of greens, in a sandwich, or with crackers.
Notes
- For a bit of sweetness, add a tablespoon of honey to the dressing.
- Substitute the walnuts with pecans or almonds for a different crunch.
