Description

A delicious and hearty dish featuring chicken sausages, zucchini, tomatoes, and pasta, perfect for a quick weeknight dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken sausages, sliced
  • 2 medium zucchinis, diced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces pasta (penne or rotini)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes.
  3. Add the diced zucchini to the skillet and sauté for 3-4 minutes until slightly softened.
  4. Stir in the cherry tomatoes, minced garlic, dried oregano, and red pepper flakes (if using). Cook for another 3-4 minutes until the tomatoes are softened.
  5. Add the cooked pasta to the skillet, along with the reserved pasta water. Toss everything together until well combined. Season with salt and pepper to taste.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil if desired.

Notes

  • For a vegetarian option, substitute chicken sausages with plant-based sausages or omit them entirely and add more vegetables.
  • Add a splash of lemon juice or zest before serving for a fresh flavor boost.
