- 2 tablespoons olive oil
- 1 pound chicken sausages, sliced
- 2 medium zucchinis, diced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces pasta (penne or rotini)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes.
- Add the diced zucchini to the skillet and sauté for 3-4 minutes until slightly softened.
- Stir in the cherry tomatoes, minced garlic, dried oregano, and red pepper flakes (if using). Cook for another 3-4 minutes until the tomatoes are softened.
- Add the cooked pasta to the skillet, along with the reserved pasta water. Toss everything together until well combined. Season with salt and pepper to taste.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil if desired.
Notes
- For a vegetarian option, substitute chicken sausages with plant-based sausages or omit them entirely and add more vegetables.
- Add a splash of lemon juice or zest before serving for a fresh flavor boost.
