Description
A delicious and spicy salad featuring grilled buffalo chicken skewers served over a bed of mixed greens.
Ingredients

- 2 cups cooked chicken, shredded or diced
- 1/2 cup buffalo sauce
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1 cup celery, diced
- 1/2 cup blue cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 8 wooden skewers, soaked in water for 30 minutes
- 4 cups mixed greens
- 1/4 cup ranch dressing
Instructions
- In a large bowl, combine the cooked chicken and buffalo sauce. Toss until the chicken is well coated.
- Thread the buffalo chicken onto the soaked wooden skewers, alternating with cherry tomatoes, cucumber, red onion, and celery.
- Preheat a grill or grill pan over medium heat. Grill the skewers for about 5-7 minutes, turning occasionally, until heated through and slightly charred.
- While the skewers are grilling, prepare the salad by placing the mixed greens in a large serving bowl.
- Once the skewers are done, remove them from the grill and let them cool slightly.
- Arrange the skewers on top of the mixed greens. Sprinkle with blue cheese and fresh parsley.
- Drizzle ranch dressing over the salad just before serving.
Notes
- For a spicier kick, add sliced jalapeños to the skewers.
- To make it a meal prep option, prepare the chicken and veggies in advance, and assemble the salad just before serving.
