Description

A delicious and spicy salad featuring grilled buffalo chicken skewers served over a bed of mixed greens.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup buffalo sauce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1 cup celery, diced
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 8 wooden skewers, soaked in water for 30 minutes
  • 4 cups mixed greens
  • 1/4 cup ranch dressing

Instructions

  1. In a large bowl, combine the cooked chicken and buffalo sauce. Toss until the chicken is well coated.
  2. Thread the buffalo chicken onto the soaked wooden skewers, alternating with cherry tomatoes, cucumber, red onion, and celery.
  3. Preheat a grill or grill pan over medium heat. Grill the skewers for about 5-7 minutes, turning occasionally, until heated through and slightly charred.
  4. While the skewers are grilling, prepare the salad by placing the mixed greens in a large serving bowl.
  5. Once the skewers are done, remove them from the grill and let them cool slightly.
  6. Arrange the skewers on top of the mixed greens. Sprinkle with blue cheese and fresh parsley.
  7. Drizzle ranch dressing over the salad just before serving.

Notes

  • For a spicier kick, add sliced jalapeños to the skewers.
  • To make it a meal prep option, prepare the chicken and veggies in advance, and assemble the salad just before serving.
