Delicious and easy-to-make cinnamon roll muffins that combine the flavors of traditional cinnamon rolls with the convenience of muffins.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the brown sugar and ground cinnamon for the filling.
- Fill each muffin cup halfway with batter, sprinkle a layer of the cinnamon filling, then top with more batter until the cups are about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, prepare the glaze by mixing powdered sugar and milk until smooth.
- Once the muffins are done, let them cool for a few minutes before drizzling with the glaze.
Notes
- For a richer flavor, use brown butter instead of melted butter.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to add nuts or raisins for extra texture.
