Description

A hearty and flavorful classic beef stew recipe that is perfect for a comforting meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.
  3. Stir in the tomato paste, thyme, rosemary, and season with salt and pepper. Cook for another minute.
  4. Return the browned beef to the pot and add the carrots, potatoes, beef broth, and red wine (if using). Stir to combine.
  5. Add the bay leaves and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 2 hours, or until the beef is tender.
  6. If using, add the frozen peas during the last 10 minutes of cooking.
  7. Remove the bay leaves before serving. Garnish with chopped parsley and serve hot.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
  • You can add other vegetables like green beans or mushrooms for added flavor and nutrition.
