- 2 cups fresh cherries, pitted and halved
- 1 cup whole milk
- 3 large eggs
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
- 1 tablespoon unsalted butter, melted
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or pie dish with butter.
- Arrange the pitted cherries evenly in the bottom of the prepared baking dish.
- In a mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, almond extract, and salt until well combined.
- Gradually add the flour to the mixture, whisking until smooth and free of lumps.
- Pour the batter over the cherries in the baking dish.
- Drizzle the melted butter over the top of the batter.
- Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown. A toothpick inserted in the center should come out clean.
- Allow to cool slightly before dusting with powdered sugar, if desired. Serve warm or at room temperature.
Notes
- For a richer flavor, substitute half of the milk with heavy cream.
