Description

Cowboy Queso is a creamy and flavorful dip made with ground beef, cheese, and a variety of vegetables, perfect for gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 ounces cream cheese, cubed
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Tortilla chips (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Mix in the diced tomatoes with green chilies, black beans, corn, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine and let simmer for 5 minutes.
  4. Lower the heat and add the cream cheese, stirring until melted and fully incorporated. Gradually add the shredded cheddar cheese, mixing until melted and creamy. Season with salt and pepper to taste.
  5. Remove from heat and garnish with fresh cilantro. Serve warm with tortilla chips for dipping.

Notes

  • For a spicier version, add diced jalapeños or use pepper jack cheese instead of cheddar.
  • To make it vegetarian, substitute the ground beef with a plant-based meat alternative or increase the amount of beans and corn.
