Ingredients

  • 1 pound mini sweet peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Cut the mini peppers in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined and creamy.
  4. Using a spoon or a piping bag, fill each half of the mini peppers with the cream cheese mixture.
  5. Place the stuffed peppers on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the cheese is slightly golden.
  7. If using chives, sprinkle them over the stuffed peppers before serving.
