Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned and fully cooked, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  3. Stir in the diced tomatoes (with juice), beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  4. Add the pasta to the skillet, stirring to combine. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.
  5. Once the pasta is cooked, stir in the heavy cream and shredded mozzarella cheese. Cook for an additional 2-3 minutes until the cheese is melted and the sauce is creamy.
  6. Remove from heat and let it sit for a couple of minutes. Garnish with chopped parsley before serving.
