- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 3 cups chicken or seafood broth
- 1 cup heavy cream
- 1 cup cooked lobster meat, chopped
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the heavy cream, chopped lobster meat, corn, and dried thyme. Simmer for an additional 5-10 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a few dashes of hot sauce while simmering.
- If you prefer a thicker chowder, mash some of the potatoes against the side of the pot before adding the cream.
