Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 teaspoon lemon juice
  • 1 teaspoon dried dill
  • 8 ounces cooked salmon, flaked
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until the tomatoes start to soften.
  4. Pour in the heavy cream, lemon juice, and dried dill. Stir well and let the mixture simmer for 2-3 minutes until slightly thickened.
  5. Gently fold in the flaked salmon and cooked tortellini. Season with salt and pepper to taste. Cook for another 2-3 minutes until everything is heated through.
  6. Serve hot, garnished with fresh parsley.
