Description

Ingredients

  • 2 tablespoons olive oil
  • 4 salmon fillets (about 6 ounces each)
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice
  • Fresh basil, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Add the salmon to the skillet and cook for about 4-5 minutes on each side, or until cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  3. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, Italian seasoning, and lemon juice. Stir until the cheese has melted and the sauce is creamy.
  5. Return the salmon to the skillet, spooning the sauce over the fillets. Let it simmer for an additional 2-3 minutes to heat the salmon through.
  6. Garnish with fresh basil before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Add a splash of white wine to the sauce for extra flavor, or toss in some cooked pasta for a complete meal.
