Ingredients

  • 2 cups grated potatoes (about 2 medium potatoes)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped green onions (optional)
  • Vegetable oil for frying

Instructions

  1. Begin by grating the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated potatoes, corn, cheddar cheese, flour, eggs, garlic powder, onion powder, salt, black pepper, paprika, and green onions (if using). Mix until well combined.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  4. Once the oil is hot, scoop about 1/4 cup of the fritter mixture and flatten it slightly before placing it in the skillet. Repeat with additional scoops, making sure not to overcrowd the pan.
  5. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  6. Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
  7. Serve warm with your favorite dipping sauce or sour cream.
