- 2 cups grated potatoes (about 2 medium potatoes)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup chopped green onions (optional)
- Vegetable oil for frying
Instructions
- Begin by grating the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the grated potatoes, corn, cheddar cheese, flour, eggs, garlic powder, onion powder, salt, black pepper, paprika, and green onions (if using). Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, scoop about 1/4 cup of the fritter mixture and flatten it slightly before placing it in the skillet. Repeat with additional scoops, making sure not to overcrowd the pan.
- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or sour cream.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper to the mixture.
- Substitute the cheddar cheese with pepper jack or mozzarella for a different flavor profile.
