Ingredients

- 2 large cucumbers, thinly sliced
- 2 large carrots, grated
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced cucumbers, grated carrots, red onion, and parsley.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the vegetable mixture and toss gently to coat all the ingredients evenly.
- Let the salad sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
