Description

Curry udon is a quick and delicious Japanese dish that combines udon noodles with a flavorful curry broth, perfect for a 15-minute meal.


Ingredients

  • 2 cups udon noodles
  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 1 medium carrot, sliced
  • 1 cup sliced mushrooms (shiitake or button)
  • 2 cups vegetable or chicken broth
  • 2 tablespoons Japanese curry powder
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 green onion, chopped (for garnish)
  • Optional: 1 cup cooked protein (tofu, chicken, or beef)

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet or pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté for about 2 minutes until translucent.
  3. Add the sliced carrot and mushrooms to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender.
  4. Pour in the vegetable or chicken broth and bring to a simmer. Stir in the curry powder, soy sauce, and sugar, mixing well to combine.
  5. If using, add the cooked protein to the skillet and heat through for about 2 minutes.
  6. Add the cooked udon noodles to the skillet, tossing to coat them in the curry sauce. Cook for another 1-2 minutes until everything is heated through.
  7. Serve hot, garnished with chopped green onions.

Notes

  • For a spicier kick, add a teaspoon of chili paste or sriracha to the broth.
