- 8 ounces dried Chinese wheat noodles or spaghetti
- 2 tablespoons vegetable oil
- 1 pound ground pork (or ground turkey for a lighter option)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons sesame paste or peanut butter
- 1 tablespoon chili oil (adjust to taste)
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/4 cup chicken broth or water
- 2 green onions, sliced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the ground pork and cook until browned, about 5-7 minutes.
- Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- In a small bowl, whisk together the soy sauce, sesame paste (or peanut butter), chili oil, rice vinegar, sugar, and chicken broth (or water).
- Pour this sauce over the cooked pork in the skillet, stirring to combine. Let it simmer for about 2-3 minutes to thicken slightly.
- Add the cooked noodles to the skillet, tossing to coat them evenly with the sauce. Cook for another 1-2 minutes until heated through.
- Season with salt and pepper to taste.
- Serve the noodles hot, garnished with sliced green onions and chopped cilantro.
Notes
- For added crunch, top with crushed peanuts or sesame seeds.
- For a vegetarian option, substitute the ground pork with crumbled tofu and use vegetable broth instead of chicken broth.
