Description

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1/4 cup vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a medium bowl, combine chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the sliced red and green bell peppers, onion, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the skillet. Add sweet chili sauce, rice vinegar, sesame oil, and red pepper flakes. Stir well to combine and cook for an additional 2-3 minutes until heated through.
  5. Serve hot, garnished with sliced green onions.
