Description

A quick and flavorful recipe for Easy Black Pepper Chicken with Mushrooms, perfect for a weeknight dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound), cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup sliced mushrooms (button or cremini)
  • 1 bell pepper, sliced (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon black pepper (adjust to taste)
  • 1 tablespoon honey (optional)
  • 1/4 cup chicken broth
  • 2 green onions, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. In a medium bowl, combine the chicken pieces with soy sauce, cornstarch, and black pepper. Mix well and let marinate for about 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender.
  4. Add the minced garlic and ginger to the skillet, cooking for an additional 1 minute until fragrant.
  5. Return the chicken to the skillet. Pour in the chicken broth and honey (if using), stirring to combine. Cook for another 2-3 minutes until everything is heated through and the sauce thickens slightly.
  6. Serve the black pepper chicken over cooked rice or noodles, garnished with chopped green onions.

Notes

  • For added heat, include a pinch of red pepper flakes or a dash of hot sauce when cooking.
  • Substitute the chicken with shrimp or tofu for a different protein option, adjusting cooking times as necessary.
