Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and black pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.
  3. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender, flipping halfway through for even cooking.
  4. While the potatoes are roasting, prepare the creamy garlic sauce. In a medium saucepan over medium heat, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  5. Pour in the heavy cream and stir in the dried Italian herbs. Bring the mixture to a gentle simmer, then reduce the heat to low.
