- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup warm water (about 110°F)
- 1/4 cup olive oil, plus extra for drizzling
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 3 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Coarse sea salt, for topping
Instructions
- Preheat your oven to 400°F and grease a standard muffin tin with olive oil.
- In a large bowl, combine the flour, baking powder, salt, and sugar.
- In a separate bowl, mix the warm water and olive oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped rosemary, minced garlic, black pepper, and red pepper flakes if using. Do not overmix; the batter should be slightly lumpy.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Drizzle a little olive oil on top of each muffin and sprinkle with coarse sea salt.
- Bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- This recipe makes 12 muffins.
- For a cheesy twist, add 1/2 cup of grated Parmesan cheese to the batter before baking.
- For a more herbaceous flavor, try adding a teaspoon of dried oregano or thyme along with the rosemary.
