- 1 can (14.75 ounces) pink salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 1/4 cup mayonnaise
- 1 large egg
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
- Lemon wedges (for serving)
Instructions
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
- Form the mixture into patties, about 2-3 inches in diameter. You should have approximately 8 patties.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking in batches if necessary to avoid overcrowding.
- Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve warm with lemon wedges.
Notes
- For added flavor, mix in fresh herbs like dill or parsley into the salmon mixture.
- Substitute the breadcrumbs with crushed crackers or panko for a different texture.
