Ingredients

  • 1 can (14.75 ounces) pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should have approximately 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking in batches if necessary to avoid overcrowding.
  4. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve warm with lemon wedges.

  • For added flavor, mix in fresh herbs like dill or parsley into the salmon mixture.
