- 8 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1 cup fresh basil leaves, roughly chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic glaze
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large bowl, combine the cooled tortellini, cherry tomatoes, mozzarella balls, and fresh basil.
- Drizzle the olive oil and balsamic glaze over the salad. Toss gently to combine.
- Season with salt and pepper to taste. Adjust the balsamic glaze if desired for extra sweetness.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
