Description
A delicious and easy vegan recipe featuring crispy tofu and sweet pineapple, perfect for a plant-based dinner.
Ingredients
Scale
- 1 block (14 oz) firm tofu, pressed and drained
- 1 cup fresh pineapple, diced
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon vegetable oil
- 1/4 cup green onions, chopped (for garnish)
- Sesame seeds (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the pressed tofu into bite-sized cubes and place them in a bowl.
- In a separate bowl, whisk together the soy sauce, maple syrup, sesame oil, garlic powder, and ginger powder. Pour this marinade over the tofu cubes, ensuring they are well coated. Let it marinate for at least 15 minutes.
- After marinating, sprinkle the cornstarch over the tofu and toss gently to coat each piece.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the tofu cubes in a single layer. Cook for about 5-7 minutes, turning occasionally until they are golden and crispy on all sides.
- Transfer the crispy tofu to the prepared baking sheet and add the diced pineapple on top. Bake in the preheated oven for 10-15 minutes, until the pineapple is caramelized.
- Remove from the oven and garnish with chopped green onions and sesame seeds if desired. Serve warm.
Notes
- For added flavor, marinate the tofu overnight for a deeper taste.
- Substitute the pineapple with other fruits like mango or bell peppers for a different twist.
