- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 avocado, sliced
- 1 medium tomato, sliced
- 1/2 cup shredded lettuce
- 4 bolillo rolls or crusty sandwich rolls
- Fresh cilantro leaves for garnish (optional)
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat.
- In a small bowl, mix together the olive oil, chili powder, garlic powder, cumin, salt, black pepper, and paprika. Rub this spice mixture all over the chicken breasts.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
- While the chicken is resting, in another bowl, combine the mayonnaise and lime juice. Mix well.
- Slice the bolillo rolls in half and spread the lime mayo on both sides.
- Layer the sliced chicken, avocado, tomato, and shredded lettuce on the bottom half of each roll.
- Top with fresh cilantro leaves if desired, then place the top half of the roll on each sandwich.
- Serve immediately and enjoy your flavorful chicken torta sandwiches!

- For added heat, include sliced jalapeños or a drizzle of hot sauce on the sandwiches.
