Description

A savory dish featuring tender beef bites and roasted baby potatoes, all coated in a rich garlic butter sauce.


Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.
  3. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
  4. While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter.
  5. Once the butter is melted and bubbling, add the beef cubes to the skillet. Season with salt, pepper, thyme, and rosemary. Sear the beef for about 2-3 minutes on each side until browned but not fully cooked.
  6. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
  7. Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and well combined.
  8. Once the potatoes are done roasting, add the beef mixture to the baking sheet with the potatoes. Toss everything together to combine.
  9. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the beef is cooked to your desired doneness.
  10. Remove from the oven, garnish with fresh parsley, and serve hot.

  • For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
