- 1 pound beef sirloin, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.
- Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
- While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter.
- Once the butter is melted and bubbling, add the beef cubes to the skillet. Season with salt, pepper, thyme, and rosemary. Sear the beef for about 2-3 minutes on each side until browned but not fully cooked.
- Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
- Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and well combined.
- Once the potatoes are done roasting, add the beef mixture to the baking sheet with the potatoes. Toss everything together to combine.
- Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the beef is cooked to your desired doneness.
- Remove from the oven, garnish with fresh parsley, and serve hot.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
- Substitute the beef with chicken or shrimp for a different protein option.
