A delicious and easy recipe for Garlic Steak Bites and Potatoes that combines tender steak with roasted baby potatoes, perfect for a quick weeknight dinner.

- 1 pound sirloin steak, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the minced garlic. Spread the potatoes on a baking sheet in a single layer.
- Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
- While the potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the steak bites to the skillet in a single layer, making sure not to overcrowd the pan. Season with salt, pepper, rosemary, and thyme. Cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.
- Add the remaining minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Once the potatoes are done, remove them from the oven and add them to the skillet with the steak. Toss everything together to combine.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the steak bites in a mixture of soy sauce, Worcestershire sauce, and a splash of vinegar for 30 minutes before cooking.
- Substitute the baby potatoes with sweet potatoes for a healthier twist, adjusting the cooking time as needed.
