Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the minced garlic. Spread the potatoes on a baking sheet in a single layer.
  3. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
  4. While the potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat.
  5. Add the steak bites to the skillet in a single layer, making sure not to overcrowd the pan. Season with salt, pepper, rosemary, and thyme. Cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.
  6. Add the remaining minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  7. Once the potatoes are done, remove them from the oven and add them to the skillet with the steak. Toss everything together to combine.
  8. Garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the steak bites in a mixture of soy sauce, Worcestershire sauce, and a splash of vinegar for 30 minutes before cooking.
