Description

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce are delicious and nutritious, perfect for a healthy meal.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your grill or grill pan over medium-high heat. While it heats, season the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  2. Once the grill is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
  3. While the chicken is resting, steam the broccoli florets until tender, about 4-5 minutes.
  4. In a small bowl, mix together the Greek yogurt, mayonnaise, minced garlic, lemon juice, and a pinch of salt and pepper to create the creamy garlic sauce.
  5. To assemble the bowls, divide the cooked brown rice or quinoa among four bowls. Top each with sliced grilled chicken, steamed broccoli, and a generous drizzle of the creamy garlic sauce.
  6. Garnish with fresh parsley if desired. Serve immediately.

Notes

  • For a smoky flavor, add a teaspoon of smoked paprika to the chicken seasoning.
  • You can also swap the broccoli for any other favorite vegetable, such as bell peppers or asparagus, for a different twist.
