Description

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce are delicious and nutritious, perfect for a healthy meal.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat. While it heats, season the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  2. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  3. While the chicken is resting, steam the broccoli florets until tender, about 4-5 minutes. You can use a steamer basket or microwave with a splash of water in a covered bowl.
  4. In a small bowl, mix together the Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper to create the creamy garlic sauce. Adjust seasoning to taste.
  5. To assemble the bowls, divide the steamed broccoli among four bowls, top with sliced grilled chicken, and drizzle with the creamy garlic sauce.

Notes

  • For added flavor, try marinating the chicken in your favorite herbs or spices for a few hours before grilling.
  • You can also substitute the broccoli with other veggies like bell peppers or asparagus for a different twist.
  • For a heartier meal, serve over cooked quinoa or brown rice.
