A delicious and tropical grilled chicken recipe featuring mango and pineapple.

- 2 large chicken breasts (about 1 pound)
- 1 ripe mango, peeled and diced
- 1 cup fresh pineapple, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions
- In a medium bowl, combine the diced mango, pineapple, soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, salt, and lime juice. Mix well to create a marinade.
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Reserve the other half of the marinade for basting. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. During the last few minutes of grilling, brush the reserved marinade over the chicken for added flavor.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the grilled chicken topped with the remaining mango and pineapple mixture, and garnish with fresh cilantro.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
- Serve with a side of coconut rice or a fresh green salad for a complete meal.
