  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil, chopped (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until the onion becomes translucent.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the diced zucchini and red bell pepper. Cook for another 5 minutes until the vegetables are tender.
  4. Season the mixture with oregano, paprika, salt, and pepper. Stir well to combine.
  5. Add the halved cherry tomatoes and cook for an additional 2-3 minutes until they soften slightly.
  6. Remove from heat and stir in fresh basil if using. Serve hot, topped with grated Parmesan cheese if desired.
