A delicious and hearty turkey bolognese bake that combines ground turkey with vegetables and pasta, topped with melted cheese.

- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium zucchini, diced
- 1 red bell pepper, diced
- 1 can (14.5 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces whole wheat penne pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
- Add the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer the mixture for 10 minutes, stirring occasionally.
- While the sauce simmers, cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Combine the cooked pasta with the turkey bolognese sauce in the skillet, mixing well.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the mozzarella and Parmesan cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- For added flavor, consider adding a pinch of red pepper flakes to the sauce for a little heat.
- You can substitute ground turkey with lean ground beef or chicken for a different taste.
- For a vegetarian option, replace the meat with lentils or mushrooms.
