Description
A zesty and healthy dish featuring grilled chicken marinated in honey and lime, served over brown rice.
Ingredients
Scale
- 2 large chicken breasts (about 1 pound), boneless and skinless
- 1/4 cup honey
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked brown rice
- 1 cup fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a medium bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, cumin, salt, and black pepper to create the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes or up to 2 hours for more flavor.
- Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
- While the chicken is grilling, prepare the brown rice according to package instructions if not already cooked.
- Once the chicken is done, let it rest for 5 minutes before slicing it into strips.
- Serve the sliced chicken over a bed of brown rice, garnished with chopped cilantro and lime wedges on the side.
Notes
- For added flavor, marinate the chicken overnight.
- Substitute quinoa or cauliflower rice for a lower-carb option.
