- 2 large chicken breasts (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F.
- Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
- While the chicken is cooking, in a small bowl, mix together the honey, red pepper flakes, lemon juice, and minced garlic.
- Once the chicken is browned, pour the honey mixture over the chicken in the skillet. Sprinkle the crumbled feta cheese on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the chicken in the honey mixture for 30 minutes before cooking.
- Serve with a side of roasted vegetables or a fresh salad to complete the meal.
