Description

Jalapeño Popper Chicken Taquitos are a delicious and crispy treat filled with a creamy mixture of chicken, cheese, and jalapeños, perfect for a snack or appetizer.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 (8 oz) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small flour tortillas
  • Cooking oil for frying
  • Sour cream and salsa for serving

Instructions

  1. In a large mixing bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
  2. Warm the tortillas in a microwave for about 20 seconds to make them pliable.
  3. Place about 2-3 tablespoons of the chicken mixture in the center of each tortilla. Roll tightly, folding in the sides as you go to secure the filling.
  4. Heat about 1 inch of cooking oil in a large skillet over medium heat.
  5. Once the oil is hot, carefully place the taquitos seam-side down in the skillet. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the taquitos from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve warm with sour cream and salsa on the side.

Notes

  • For a healthier version, bake the taquitos at 400°F for 15-20 minutes until crispy, brushing them lightly with oil before baking.
  • Add some cooked bacon bits to the filling for an extra smoky flavor.
