- 1 cup cottage cheese, drained
- 1 large egg
- 1 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
Instructions
- In a mixing bowl, combine the drained cottage cheese and egg. Mix well until smooth.
- Add the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper to the bowl. Stir until a dough forms.
- Divide the dough into 4 equal portions and shape each portion into a flat round disc, about 1/4 inch thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, place two flatbreads in the skillet and cook for 3-4 minutes on each side until golden brown.
- Remove the cooked flatbreads and repeat with the remaining oil and dough.
- Serve warm or at room temperature.
Notes
- For added flavor, mix in fresh herbs like chopped rosemary or thyme into the dough.
- Serve with your favorite dip or spread, such as guacamole or tzatziki, for a delicious appetizer.
