Description
A refreshing and healthy Lemon Arugula Pasta Salad perfect for warm days or as a side dish.
Ingredients

- 8 ounces of whole wheat pasta (fusilli or penne)
- 4 cups of fresh arugula, washed and dried
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, diced
- 1/4 cup of red onion, thinly sliced
- 1/3 cup of feta cheese, crumbled
- 1/4 cup of extra virgin olive oil
- Juice of 1 large lemon
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, arugula, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, pepper, and red pepper flakes (if using).
- Pour the dressing over the pasta salad and toss gently to combine all ingredients.
- Taste and adjust seasoning if necessary. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Serve cold or at room temperature.
Notes
- For added protein, consider adding grilled chicken or chickpeas.
- You can substitute arugula with spinach or mixed greens for a different flavor profile.
