- 4 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for about 4-5 minutes, until the skin is crispy.
- Carefully flip the salmon fillets and cook for an additional 2-3 minutes. Remove the salmon from the skillet and set aside on a plate.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, lemon zest, and lemon juice. Stir to combine and bring to a gentle simmer.
- Add the Parmesan cheese and stir until melted and the sauce is creamy. Season with salt and pepper to taste.
- Return the salmon fillets to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For added flavor, consider marinating the salmon in lemon juice, garlic, and herbs for 30 minutes before cooking.
- Substitute the heavy cream with coconut cream for a dairy-free version, and adjust the seasoning to taste.
