Description

Delicious and chewy Rocky Road Cookies inspired by Levain Bakery, packed with chocolate chips, marshmallows, and walnuts.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup mini marshmallows
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips, milk chocolate chips, mini marshmallows, and walnuts (if using) until evenly distributed.
  7. Using a large cookie scoop or spoon, drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown but the centers are still soft.
  9. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, chill the dough for at least 30 minutes before baking.
  • Substitute the walnuts with pecans or omit them entirely for a nut-free version.
