A delicious and hearty Mexican Lasagna made with layers of tortillas, chicken, beans, corn, and cheese, perfect for a family meal.

- 2 cups cooked and shredded chicken (or ground beef)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken (or ground beef), black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix well to combine.
- Spread a thin layer of salsa on the bottom of a 9×13-inch baking dish.
- Place 4 corn tortillas over the salsa, slightly overlapping them.
- Spread half of the chicken mixture over the tortillas, followed by 1 cup of shredded cheddar cheese.
- Repeat the layers: add 4 more tortillas, the remaining chicken mixture, and another cup of cheese.
- Top with the last 4 tortillas, the remaining salsa, and the final cup of cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing. Serve with a dollop of sour cream and a sprinkle of cilantro if desired.
Notes
- For a vegetarian version, substitute the chicken with additional beans or sautéed vegetables like bell peppers and zucchini.
- Spice it up by adding jalapeños or using spicy salsa for an extra kick.
