A delicious and easy-to-make Reese’s Peanut Butter Earthquake Cake that combines the rich flavors of peanut butter and chocolate.

- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chunks (or semi-sweet chocolate chips)
- 1/2 cup chopped peanuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter and granulated sugar until well blended.
- Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully combined.
- Gently fold in the chocolate chunks and chopped peanuts, if using.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a twist, try adding a teaspoon of cinnamon to the dough for a warm flavor.
- Substitute half of the peanut butter with almond butter or sunflower seed butter for a different nutty taste.
