A simple and delicious recipe for Pan Fried Cod with a buttery lemon sauce, perfect for a quick weeknight dinner.


Ingredients

  • 4 (6-ounce) cod fillets, skinless
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. Place the flour in a shallow dish. Dredge each fillet in the flour, shaking off any excess.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbly.
  4. Add the cod fillets to the skillet, cooking for about 3-4 minutes on each side, or until golden brown and cooked through. The fish should flake easily with a fork.
  5. In the last minute of cooking, add the remaining 2 tablespoons of butter and lemon juice to the skillet, spooning the melted butter over the fillets.
  6. Remove the cod from the skillet and transfer to a serving platter. Drizzle with any remaining butter sauce from the skillet and garnish with fresh parsley.
  7. Serve immediately with lemon wedges on the side.

Notes

  • For a crispy coating, try adding a tablespoon of cornmeal to the flour mixture.
